Restaurant menus and broccoli casserole

Hadn’t said hey for while — boy have we been busy. Rog has been collecting restaurant menus in 11 counties for Sunlark, and that has been keeping him extra busy on top of the court research he does for them. We went with him.  More on the trip and a yummy recipe here and the girls had a great time getting menus!

We also saw another batch of the lovely mid/southern Ohio hills – these by the Ohio River border with West Virginia  Boy, how beautiful.

Lastly, posting a recipe that I posted onto a board today where they asked for everyone’s favorite recipe. This is a classic in our family:

I have been making this since I was 14 and everyone loves it! I bring it to pot lucks

2 boxes or one bag of broccoli, cooked
1 can of cream of mushroom soup
1/4 cup of mayonnaise
1/4 cup of milk
1 egg
1/2 cup cheddar cheese
1/2 cup browned bread crumbs
2 T butter or margarine.

Cook broccoli until tender. While broccoli is cooking, melt butter in frying pan, then pour in bread crumbs and stir until brown. Mix soup, mayo, milk & egg in casserole dish. When broccoli has cooked, drain, place in casserole with the sauce. Mix all together. Top with cheese. Top with bread crumbs.

Bake at 350 for 45 minutes. Enjoy

Sometimes at holidays I will mix in about 1 cup of breast of chicken, cooked and sliced. I have also made with green beans instead of broccoli
